Caramelized Onion, Fried Mushroom Omelette
Ingredients:
4 large fresh eggs
8 grams butter
2 cups sliced mushrooms
1 medium onion, sliced
2 fl oz low fat buttermilk
3 small scallions
5 oz freshly grated Parmesan cheese
Easy Directions:
Sauté the mushrooms in one half of the butter, then caramelize the onions in the remaining butter.
Whisk eggs and add the sliced scallions and buttermilk.
Lightly spray a pan and heat over a medium heat.
Pour the egg mixture then add the caramelized onions and mushrooms. Once the bottom of the omelet is cooked, flip to lightly cook other side – lovely with a side helping of baby spinach!
