Protein Packed Pineapple Muffins
2 cups of flour
1 cup of brown sugar
1/4 cup Vanilla fat free yogurt
1 cup apple sauce ( no sugar added variety)
3 eggs
2 additional egg whites
1 ½ tsp Baking Powder
1 ½ tsp Baking Soda
4 tbsp ground flax seed meal
2 tbsp of whey protein powder – any kind
2 tsp Cinnamon
1/2 tsp of salt
1/2 cup canned crushed pineapple
1/2 cup raisins
3 cups of grated carrots
1 cup of brown sugar
1/4 cup Vanilla fat free yogurt
1 cup apple sauce ( no sugar added variety)

4 tbsp ground flax seed meal
2 tbsp of whey protein powder – any kind

1/2 cup raisins
3 cups of grated carrots
Easy Directions:
Pre heat your oven to 350 degrees, spray muffin tins with cooking spray and set aside.
Combine the eggs, yogurt, apple sauce and brown sugar in a large bowl, sift over the dry ingredients and then add the pineapple, carrots and raisins.
Spoon into the muffin tins and check after 15 minutes. I’ve found in my oven they are ready, howevera friend bakes hers for a few minutes extra. To tell if they are ready press your finger into the centre of the muffin, if it springs back they are ready!
Bake for approx 15 minutes.
