Chicken Kiev
Ingredients
3Vz oz (lOOg) butter, softened
1 tsp crushed garlic
1 tsp freshly chopped parsley
1 tsp celery salt
4 chicken breasts
1 egg, beaten
1 cup flour
1 cup fine dried breadcrumbs
1J4 cup finely grated Parmesan
Spray Oil
How To
1. Combine the butter, garlic, parsley and celery salt in a medium bowl, then form into
a log shape and wrap in cling film. Chill in the fridge for at least 30 minutes.
2. Cut a slit along the side of each chicken breast, then fill the pocket with a slice of the
herby garlic butter log. Secure the opening with toothpicks
3. Pour the beaten egg into one bowl and the flour into a separate bowl. Combine the
breadcrumbs and Parmesan in a third bowl.
4. Dip each chicken breast in the flour, then the egg and lastly the cheesy breadcrumb mix.
Cover the chicken breasts and leave to chill in the fridge for 20 minutes. Meanwhile,
preheat the oven to 350 degrees F ( 180 degrees C).
5. Coat each chicken breast with some spray oil, then place into a shallow lined baking dish.
6. Cook in the oven for 20 to 25 minutes, or until golden brown and completely cooked through.
7. Remove the chicken from the oven and leave to stand for 2 to 3 minutes before removing
the toothpicks and slicing each piece of chicken in half for ser
